Rice, Cream, and fruit salad

2-3 cups rice (cooked/cooled)
2 (8 oz.) Cool whip containers
1 (12 oz.) can Pineapple tidbits (or any other fruit)
1 (11 oz.) can Mandarin oranges
1/2 cup Coconut (or as much as desired)

Combine above ingredients. Make sure rice is soft. Let cool in refrigerator before serving.

Balsamic Chicken

5-6 Chicken breasts, cut in 1/2 lengthwise

3 tsp rosemary
3 tsp minced garlic
1 tsp salt
1 tsp black pepper

Olive oil
Balsamic vinegar

Place chicken in a 9x13 pan.

Mix rosmary, garlic, salt and pepper with olive oil to make a paste.  Rub onto chicken.  Pour desired amount of balsamic vinegar over the chicken.  Cover pan with foil and bake at 450 degrees for 20 minutes.  Turn and bake 20 more minutes.

Serve with rice and a salad.

Facts About Herbs

From: "The Backyard Homestead".
  • Dried herbs are more potent than fresh--1tsp dried equals 1TB fresh.
  • To store fresh herbs, wrap them in barely damp paper towels, place inside resealable plastic bags, and keep refrigerated.
  • Add most herbs about 30 Minutes before the end of cooking time; simmer slowly to release flavor and retain volatile oils.
  • The chopped leaves of fresh herbs may be frozen with water into ice cubes and then stored in labeled, airtight freezer bags. Use to impart an herbal flavor to soups or stews.
  • Use herbs in moderation. Some may be overpowering if too much is used.

Mommarie's Cheesy Noodles

Servings: 8 to 10
Ready in: About 30 Minutes

In a pot add 1 Package 17.6 oz Organic Garofalo Noodles (or elbow Macaroni)
Cook noodles as directed on package.

In a skillet brown 1 lb meat on meadium heat. (ground beef, or ground sausage, or hot dogs, or don't use any meat at all).
Sprinkle a 1/4 of a cup flour over meat of choice. And stir. ( If you are not useing meat, then mix 1/4 C flour in 1/4 C of melted butter). Turn the heat off or down when you add the flour.

Slowly add 2 Cups of Milk. Continue stirring. (Turn oven on low when adding milk). (As you add milk slowly turn oven to a higher temp to thicken it).

When thickened add 1 Cup Sour Cream and 2 Cups of Cheese. Stir until creamy. Turn oven up to medium or low until done.

Season to taste (Mommarie uses Basil, Oregano, Marjoram, Parsley, Kirkland Organic No-Salt, Salt and Pepper)

Sprinkle with Parsely and grated cheese (Optional).

Serve hot with Sour Dough bread and fresh Garden Veggies.

Mommarie's Biscuit, Beans and Beef Casserole


1 lb Hamburger
1 Can Pork 'n' Beans (or cook your own)

1/4 C BBQ Sauce

1/2 C Ketchup
1/4 C Mustard

2 TB Brown Sugar

2 t of dried Basil or 2 TB of fresh Basil

1 TB Mince Onion or Raw

1 Can WF Biscuits (or Homemade. Click here for Best Ever Biscuits http://needsomerecipes.blogspot.com/2009/09/egg-butter.html)

Cheese

Brown beef & draw. Add Pork 'n' Beans, BBQ Sauce, Ketchup, Brown Sugar, & Onion. Heat until bubbly. Put in 2 QT baking dish, top with Biscuits and Cheese.

Bake (uncovered) at 350 for 3o minutes.

Mommarie's Taco Noodle Dinner!

Ready in less than 45 minutes.
Servings: 6

1 pound Ground Beef*

Half Head Small Cabbage

1/4 C chopped Onion
3/4 C Salsa

1/2 t Salt

3 C Uncooked fine Egg Noodles

3 C Tomato Juice

2 Cloves Garlic

2 t dried Basil or 1 T of fresh Basil

1 C Sour Cream

1 C Cheese

1 T Minced Fresh Parsley

In a large skillet over medium heat, cook the beef and onion until meat is no longer pink; drain. Stir in the Salsa and salt. Reduce heat; simmer for 2-3 minutes. Sprinkle noodles over the top. Pour tomato juice over the noodles and stir gently. Cover and simmer for 15 minutes or until noodles are soft.

Remove from the heat. Mix the sour cream, parsley and cheese; spread over the top of your Taco Noodle Dinner. Then sprinkle parsley on top (Optional). Cover and let sit for 5 minutes. (Before spreading the sour cream, cheese and parsley on top, pour into casserole dish, then spread on your sour cream, cheese and parsley mix).

Mommarie's Irish Toast Bread!




For 2 Loaves of Bread:
2 Cups Hot Water

3 T Sugar or Honey
1/2 C Oil

5-6 C Flour

2 T Yeast

1 T Salt

2 T Gluton optional w/white flour

3 T Powdered Buttermilk
1 t Nutmeg
Knead for ten minutes, let rise for 3o minutes. Bake 375 degrees for twenty to twenty five minutes.

Mommarie's Homemade Bread


Warm oven to 170 while mixing. Turn it off when you put bread in for the half hour rising period.

4 C Hot Water
3/4 C Oil
3/4 C Honey
5 C Whole Wheat (we use freshly ground hard white wheat berries)
1/4 C Gluton
2 T Salt
1/3 C Powdered Buttermilk
3 1/2 T Yeast
Mix in Bosch (optional: let rest 5 to 10 minutes while grinding more wheat.) Add 5 to 7 more C of Flour.
Mix on speed 2 (knead on speed 2) For 1o min.
(Optional: Let rise in bowl for 1o min...Punch down twice).

Shape into four loaves, sprinkle oats on top (optional), cover, let rise in oven for 3o min. Next take bread out of the oven and heat the oven to 375 degrees. Bake bread for 23z minutes or until light brown.

Mommarie's Zucchini Bran Muffins!

These turn out Yummy and moist! Great for breakfeasts!

The batter may be a little milky...but never fear, they turn out great!



2 1/2 C Whole Wheat Flour (we use fresh ground soft white wheat berries)

1/2 C Bran

2 Eggs

3/4 C Oil

3/4 C Honey

1 C Buttermilk

1/4 C Molasses

3 t Vanilla

1 t Salt

1 t Baking Soda

1 t Baking Powder

2 t Cinnamon

1/4 t Nutmeg

1/2 t Cloves

2 C Zucchini

Optional Extras:

1/2 C Carrots

1/2 C Dried Cranberries

If you have a Bosch then you can mix the ingredients all together...if not then mix the dry ingredients first then the wet ingredients last!

Mommarie's Iced Tea...

Here is a nice cold drink for you and your family to enjoy!!!

~Mommarie's Homemade Iced Snapple Tea~
To make a gallon of Iced tea you will need...
6 tea bags of Lipton or Green Tea
1 Cup Honey or sugar (whichever you prefer) or half of each.
1 Cup of lemon juice
If you would like you can also add some peppermint and spearmint herbs as well!
Cut 2 stems of the peppermint and 1 stem of the spearmint.
Or add two tea bags of peppermint if you do not grow your own.
Steep the tea bags in a bowl with four cups of hot water, for about five minutes.
Note for herbs: Cut up your herbs into the bowl before adding the tea bags; steep for 5 minutes then after add your tea bags. Do not strain your herb clippings 'til you pour your mixture into the gallon container.

Next remove the tea bags and add the one cup honey or sugar, stir until dissolved. Next add the 1 cup of lemon juice, stir and pour into your one gallon container. Then add your ice and cold water until it reaches the top.
Put the lid on and stick it in the refrigerator to enjoy some yummy iced tea!!!
